In Denmark, the island is well known for its early harvest of new potatoes.

Add the new potato and cook until it is tender but firm, about 2 minutes.

I use tiny new potatoes, about a dozen to the pound.

This is also the season of tiny new potatoes, so small that they cook in 10 to 15 minutes.

And this is the time to take advantage of the tiny new potatoes that are available in markets.

Note: The sauce is good hot or cold and goes well with new potatoes.

If you cannot find thumb-size new potatoes, use the next size.

If you cannot find tiny new potatoes, use large ones and cut them up.

Use new potatoes and you won't have to peel them.

The season for new potatoes is beginning and when steamed, they are a classic with fish.
