Rinse the watercress and endive and drain or spin dry.

Wash the spinach and without spinning dry, add to the pan and wilt in the liquid left on the leaves after washing.

Wash well and spin dry in a salad dryer (moisture would dilute the dressing).

Rinse and pat or spin dry.

Rinse greens; pat or spin dry.

Lift the greens from the water and spin dry in a salad dryer.

They are then spun dry, packed in a cushioned container and placed in a padded box.
