Add the chicken, cover and set aside for one hour.
Add the bay leaf, cover and place in the oven.
Add the shrimp, mix well, cover and cook for 3 to 4 minutes.
Add the mussels, cover and cook until they open, about eight minutes.
Add the spinach, cover and cook over low heat for 5 minutes.
Add broth and cover, cooking over low heat until done.
Add tomatoes, cover and cook over medium heat about 30 minutes.
Add the stock, cover and simmer gently for 15 minutes.
Remove from heat, add the vanilla, cover and cool for 15 minutes.
Add the lobsters quickly, one at a time, and cover.
