This will be enough for four pieces of duck breast.
Add the duck breasts, skin side down, and cook for 5 minutes.
Turn the duck breasts over and cook the other side for a minute or so.
Place the duck breasts, skin side down, on the rack.
Place the duck breasts in the oven for 3-5 minutes to finish.
Remove from the oven and rest the duck breast for one minute.
Add the duck breast and cook until medium rare, about 3 minutes per side.
Season the duck breasts with the salt and pepper to taste.
Stuff this mixture into the pockets in each duck breast.
