Heat 2 tablespoons of the oil in a large saucepan.

Brush the fish with all but one tablespoon of the oil.

Put 3 tablespoons of oil in a heavy skillet and heat.

Return the pan to the heat, and add the remaining tablespoon of oil.

Place about a tablespoon of olive oil in a bowl.
