Continue to beat at a slow speed until the mixture is almost cold, this can take up to 15 minutes.
Increase heat and boil until the mixture turns a deep brown.
Add 1 to 11/3 cups very cold water, a few tablespoons at a time, until mixture just comes together.
Return to the grill for 5 minutes or so until the mixture starts to brown.
Continue beating until the mixture is thick, light and nearly hot.
Beat until the mixture is thick and pale in color.
Continue to cook until the mixture turns a deep amber color.
Beat in 1 cup of the flour until mixture is smooth.
Place over medium heat and cook until the mixture is reduced to about 1/4 cup.
Set aside for five minutes, until mixture starts to bubble.
