Broil all the meat and onion slices over a charcoal fire.
Place all but 2 onion slices in the pot.
In a large glass bowl, layer about half the onion slices.

Place onion slices and olive oil in a large pan.
Add the red onion slices and stir to coat them in the mixture.
Brush both sides of onion slices with another teaspoon oil.
