Cover and sweat over a low heat for 4-5min, stirring once.
Cover and cook, stirring once or twice, until they open, about 5 minutes.
Cook mushrooms as in Step 2 for 8 minutes, stirring once.
Place in the fridge and leave for 3 days, stirring once each day.
